Winemaking Notes
Bouquet: Dusty rose, cardamom, dark chocolate, cherry, mulberry, ironstone, thyme, Wilyabrup soils, completely intoxicating in its depth and complexity with freshness and life.
Food pairing: Beef, biodynamic beetroot risotto, lamb.
Palate: Reflecting the purity and power of the 2016 vintage, poise, with fruit concentration and length spread across the palate. Quintessential Cullen Wilyabrup Cabernet Sauvignon in a glass from a great vintage. Plum, mulberry, cherry and cigar box, with fine grained tannins wrapping around the palate and swirling around the senses like a giant wave of flavour returning back to the shore over and over. So much length and persistence.
